Spicy and super tasty chicken skewers

We are very blessed with a family of six and we often have visitors, whether guests from abroad, friends and/or friends of the kids. There is room for everyone at our table. For us as parents, the next question is: “What do we serve?”
One of our favorite dishes (we have a lot of them) are meat skewers. These are truly delicious chicken breast fillet skewers. The sauce makes the meat particularly fine and tender. I have to add that my husband, Benjamin, is a meat and barbecue expert, he makes the perfect marinades for all kinds of meat dishes and here is one of them!
Chicken breast fillet skewers (serves 6)
Ingredients
- 120 g butter
- a handful of fresh rosemary
- 3 garlic cloves
- 60 ml fresh lemon juice
- grated zest of 1 lemon
- 20 ml olive oil
- 6 chicken breast fillets
- Salt (1-1.5 tsp)
- Pepper
- Marinade: Mix the butter, garlic, rosemary, lemon juice, salt, pepper and lemon zest well in a blender. Place a third of the mixture in a bowl to marinate. Keep the rest of the mixture for later
- Cut the chicken breast fillets into strips about 2 cm wide.
- Rub the chicken breast fillets with the marinade and leave to marinate in a bowl, covered, for 3 hours in the cold.
- Now thread the chicken breast strips onto the skewers.
- Preheat a grill and brush the grill grid with oil just before grilling. Put half of the unused marinade in a bowl and keep ready for marinating on the grill. Cover the remaining mixture and set aside, it will be served later with the skewers
- Grill the chicken breast fillets for 4 minutes on each side and brush with the rosemary and lemon mixture. Remove the chicken breast fillets from the grill and serve with the remaining mixture
Accompanied by a large salad and delicious bread.
